Perillo Quindicianni Taurasi Riserva 2005 is a deeply expressive Aglianico from the hills of Campania, crafted to show what true patience in the cellar can achieve. A rare, long‑aged release, it spends around fifteen years resting before it ever reaches the market, emerging as a fully mature, complex red with incredible depth and refinement. This is Taurasi in its most traditional, age‑worthy form – powerful yet poised, and unmistakably tied to its volcanic origins.

Tasting Notes
In the glass, the 2005 Quindicianni Taurasi Riserva shows a deep garnet core with brick‑tinged reflections at the rim, a visual cue to its extended evolution. The nose is wonderfully layered and mature, offering notes of dried black cherry, plum compote, and macerated blackberries, intertwined with leather, cigar box, dried roses, and forest floor. Subtle accents of tar, tobacco leaf, licorice, cocoa, and sweet baking spices reveal themselves gradually, rewarding patient swirling. On the palate, this wine is full‑bodied and structured yet remarkably harmonious at this stage of its life. The once‑firm Aglianico tannins have become finely woven and velvety, framing flavors of dark berry fruit, stewed cherries, balsamic nuances, and savory herbs. Earth, mineral and iron tones – signatures of Taurasi’s volcanic soils – run through the mid‑palate, while a vibrant, persistent acidity keeps everything lifted and fresh. The finish is long, savory, and multifaceted, echoing dried fruit, spice, and tobacco. Although already fully developed and beautifully integrated, well‑stored bottles still have the capacity to evolve for several more years, offering tertiary complexity rather than primary fruit.

Perillo’s Taurasi vineyards lie in the high‑altitude, cooler zones of Campania, where Aglianico benefits from significant diurnal temperature swings and mineral‑rich, often volcanic and calcareous soils. This terroir naturally produces grapes with thick skins, firm tannins, and pronounced acidity – the backbone of long‑lived wines. Harvest is typically carried out by hand, with careful selection of bunches to ensure only perfectly ripe, healthy fruit is used for the Riserva. In the cellar, the wine is traditionally vinified, with extended maceration to extract color, structure, and aromatic depth, followed by long aging in large oak casks and further maturation in bottle. The “Quindicianni” designation reflects Perillo’s philosophy of releasing the wine only after extensive cellaring – around fifteen years – allowing the power of Aglianico to soften and its complexity to unfold before it is offered to the consumer.

Food & Serving
This mature Taurasi Riserva is a natural partner for rich, deeply flavored dishes: slow‑braised lamb shank, ossobuco, wild boar ragù, or long‑stewed beef with herbs and root vegetables all work beautifully. It also pairs well with aged hard cheeses such as Parmigiano Reggiano, Pecorino, or mature Caciocavallo, and with rustic dishes featuring mushrooms, truffles, or roasted game. Serve at 18–20°C (64–68°F) in large Bordeaux‑style glasses. Given its age and sediment, decanting 30–60 minutes before serving is recommended both to clarify the wine and to allow the bouquet to fully open.
