Tasting Notes
In the glass, it shows a deep, concentrated ruby colour, hinting at the richness within. The nose is layered and expressive, with dark cherry, plum, spice, tobacco, and a distinct mineral edge that gives the wine lift and complexity. On the palate, Château Pavie 2000 is full-bodied and intensely structured, with ripe dark fruit wrapped around fine, polished tannins. The finish is long and persistent, and while the wine is already highly expressive, it still has excellent ageing potential for those who prefer to cellar it further.

Production
This wine comes from the limestone-rich terraces of Saint-Émilion, where the terroir lends natural freshness, minerality, and elegance to the fruit. The blend of Merlot, Cabernet Franc, and Cabernet Sauvignon is harvested by hand and carefully selected to preserve quality, followed by a meticulous vinification process designed to highlight both concentration and balance.

Château Pavie 2000 pairs beautifully with roast lamb, beef fillet, game, truffle dishes, and rich mushroom-based preparations. Serve at around 16–18°C, and decant for at least 1–2 hours if opening now to allow the wine to fully express its aromatic complexity and soften its structure.
