Production
Pavie is situated on the eastern limestone plateau and slopes of Saint-Émilion, where clay-limestone and clay-sand soils help produce wines with both power and lift. The estate’s vineyards are carefully managed to encourage low yields and optimal ripeness, with harvesting typically carried out by hand to preserve fruit quality. Vinification is aimed at precision and extraction, with fermentation and ageing in oak barrels to build structure, depth, and age-worthy complexity.

Food & Serving
This is an excellent match for roast lamb, beef tenderloin, venison, duck breast, and dishes with wild mushrooms or truffles. Serve at around 16–18°C for the best expression, and decanting for 1–2 hours is recommended, especially in youth, to allow the aromatics and texture to fully open.
