Tasting Notes
In the glass, Paul John Bold often shows a deep amber-gold color. The nose is immediately expressive, with notes of peat smoke, dark chocolate, roasted coffee, sweet spice, and a touch of coastal saltiness, followed by hints of dried fruit and molasses. On the palate, it is full-flavored and warming, balancing smoky intensity with layers of caramel, cinnamon, black pepper, and earthy malt. The texture is rich and slightly oily, with a long, lingering finish where smoke, spice, and gentle sweetness stay in harmony. While approachable now, it has enough structure to reward short-term cellaring over the next few years.

This whisky pairs well with grilled meats, smoked dishes, mature cheddar, blue cheese, and dark chocolate desserts. It is best served neat or with a splash of water at around room temperature to open up the aromatics, and decanting is not necessary.
