Tasting Notes
In the glass, the 2017 Pauillac de Latour shows a deep ruby to garnet hue with youthful brightness at the rim. The nose opens with aromas of blackcurrant, plum and wild berries, layered with hints reminiscent of minty cassis, graphite, pencil shavings and subtle cedar—echoing the classic Pauillac profile described in the 2017 Latour stable. There are gentle notes of violet, tobacco leaf and a light spice that unfold with air. On the palate, the wine is medium to full-bodied, poised and elegant rather than massive. Pure dark fruit—blackcurrants, blackberries and ripe plums—interweaves with refined tannins and a fresh, precise line of acidity. The texture is silky yet structured, with good concentration for the vintage and a long, mineral-tinged finish. In demi-bottle, this 2017 is already entering a very enjoyable drinking window: it should show beautifully over the next 3–8 years, offering its best balance of fruit and secondary complexity between now and roughly 2028–2030.

Production
Pauillac de Latour is sourced from vineyards in Pauillac on the Left Bank of the Gironde, primarily from gravelly, well-drained soils over clay and limestone that are ideal for Cabernet Sauvignon. The blend typically leans heavily on Cabernet Sauvignon, supported by Merlot and small proportions of Cabernet Franc and/or Petit Verdot, giving structure, depth and aromatic complexity. Grapes are hand-harvested parcel by parcel, with strict selection in the vineyard and at the winery to uphold Château Latour’s rigorous quality standards. Vinification follows the estate’s classical Bordeaux approach: fermentation in temperature-controlled vats, careful extraction to preserve finesse, and maturation in French oak barrels (a portion of which are new) to integrate tannins and add subtle spice, all while maintaining purity of fruit and a clear expression of Pauillac terroir.

Food & Serving
This Pauillac is a natural partner for classic meat dishes: roasted lamb with herbs, entrecôte with Béarnaise, beef Wellington, duck breast, venison or game birds, and rich stews such as boeuf bourguignon. It also pairs beautifully with hard cheeses like Comté, aged Gouda or mature cheddar, and with dishes featuring mushrooms or truffle.
