Crafted from Corvina, Corvinone, Oseleta and Rondinella, this wine showcases the full potential of high-altitude vineyards in Veneto, Italy. The Mai Dire Mai line is conceived as a pinnacle project from Pasqua, uniting the family’s long-standing expertise with the rare terroir of Montevegro to produce a uniquely complex and ageworthy red.

Tasting Notes
In the glass, the 2015 Mai Dire Mai Valpolicella Superiore shows a deep ruby core with garnet reflections developing at the rim, hinting at its evolution in bottle. The nose is layered and expressive: ripe red and black cherries, wild berries and plum are framed by notes of dried rose, sweet spices, cocoa and a distinct stony minerality derived from its basalt- and limestone-rich soils. On the palate, the wine is full-bodied yet poised, with finely knit tannins and vibrant acidity providing both structure and freshness. Flavors of marasca cherry, blackcurrant and blackberry intertwine with hints of licorice, tobacco leaf, dark chocolate and a subtle savory, herbal edge. The finish is long, precise and mineral-driven, with a lingering memory of spice and fruit. Given its concentration and balance, the 2015 vintage has excellent aging potential, evolving gracefully over 10–15 years from vintage, gaining further complexity, tertiary notes and silkier texture with time in the cellar.

Production
The grapes for Mai Dire Mai Valpolicella Superiore 2015 come exclusively from the Montevegro vineyard, a 23-hectare estate perched at about 350 meters above sea level between Val d’Illasi and Val di Mezzane in Veneto. Here, a combination of basaltic and calcareous soils delivers optimal drainage and a marked mineral imprint, while the elevation ensures significant diurnal temperature shifts that preserve aromatic intensity and acidity. The vines are carefully tended and harvested by hand to allow strict selection of bunches at peak ripeness. In the cellar, traditional Valpolicella varieties—Corvina, Corvinone, Oseleta and Rondinella—are vinified with temperature-controlled fermentation to protect delicate aromatics, followed by extended maceration to extract color, tannin and flavor. The wine then matures in oak (often a mix of barrique and larger formats) for an extended period to integrate structure, add subtle spice notes and develop complexity before bottling.

Food & Serving
This Valpolicella Superiore is an ideal partner for rich, savory dishes such as braised beef, osso buco, slow-cooked lamb shank, or game birds with roasted root vegetables. It also pairs beautifully with aged hard cheeses like Parmigiano Reggiano, mature Pecorino or well-cured salumi, as well as mushroom-based risotto and truffle dishes that highlight its earthy, mineral side. Serve at 16–18°C (60–64°F) for optimum expression. Decanting for 1–2 hours before serving is recommended, especially in its youth, to allow the aromatics to open fully and the tannins to soften.
