Tasting Notes
In the glass, Pasqua Hey French typically shows a luminous straw-yellow hue with greenish highlights, hinting at its freshness and youthful energy. The nose is expressive and refined, opening with notes of white flowers, citrus zest and green apple, followed by ripe pear, stone fruit and a subtle herbal lift from the Sauvignon Blanc. Underneath, a flinty, wet-stone minerality recalls the basaltic soils of Monte Calvarina. On the palate, this is a poised and textural white, where Garganega brings structure and saline depth, Pinot Bianco adds roundness and gentle creaminess, and Sauvignon Blanc contributes tension and aromatic lift. Expect bright acidity, flavors of lemon curd, crisp peach, golden apple and a hint of tropical fruit, layered over a long, savory finish marked by chalk and volcanic stone. Thanks to the high-altitude terroir and naturally high acidity, this wine has very good aging potential for a white: it can be enjoyed now for its freshness, but will develop additional complexity, honeyed and nutty nuances, and even more integrated minerality over the next few years.

Production
The fruit for Pasqua Hey French is sourced from the Monte Calvarina vineyard, a compact 4.5-hectare site rising up to 600 meters above sea level in the Soave area of Veneto. The vineyard sits on a hill of basaltic, eruptive origin with extensive limestone outcrops, a combination that delivers both volcanic tension and chalky elegance in the finished wine. The altitude and south-west exposure ensure cool, breezy summers and large diurnal temperature swings, allowing for slow, even ripening and the accumulation of complex aromatic compounds in the grapes. Harvesting is typically carried out in carefully timed passes, often by hand, to ensure optimal ripeness and to keep the fruit intact. In the cellar, the varieties are vinified with a gentle, protective approach: soft pressing, controlled-temperature fermentation to preserve aromatics, and thoughtful blending of Garganega, Pinot Bianco and Sauvignon Blanc to achieve balance between freshness, texture and minerality. A period on fine lees may be employed to enhance mouthfeel and aromatic complexity before bottling.

Pasqua Hey French is a versatile gastronomic white that excels with refined seafood and vegetable-driven dishes. It pairs beautifully with oysters, grilled prawns, scallops, sea bass or turbot, as well as risotto with asparagus, lemony pasta with clams, and delicate sushi or crudo. Its mineral backbone and fresh acidity also complement soft cheeses, goat cheese salads and light poultry dishes with herbs or citrus. Serve well-chilled but not ice-cold, ideally around 8–10°C (46–50°F), to allow the full aromatic profile to emerge. A brief 15–20 minutes in the glass or in a small carafe can help the wine open up and reveal its layered fruit and mineral notes, though extended decanting is generally not necessary.
