Why shop with us?
Pascal Rollet’s Saint-Véran "Madame Noly" 2023 is a refined white Burgundy that combines purity, texture, and a distinct mineral edge. Sourced from a prized single parcel on the chalky plateau of Mont de Pouilly, this Chardonnay reflects both the character of its terroir and the finesse that has made Saint-Véran one of the most admired appellations in southern Burgundy.
Tasting Notes
In the glass, it shows a bright, luminous pale gold appearance. The nose is elegant and expressive, with notes of baked apple, conference pear, and a hint of candied lemon, lifted by a subtle saline nuance.
The palate is fruit-forward and precise, with gentle buttery undertones, a clean, polished mouthfeel, and impressive balance between ripeness and freshness. Its mineral spine and lingering finish give it both charm and depth, and while it is immediately enjoyable, it should also develop well over the next few years.
Production
"Madame Noly" comes from a unique vineyard parcel on the limestone-rich plateau of Mont de Pouilly, at around 400 meters above sea level, where the cool altitude and chalky soils help preserve tension and minerality. The wine is harvested with care and vinified entirely in stainless steel, a choice that emphasizes clarity, freshness, and the natural expression of the Chardonnay fruit.
Food & Serving
This Saint-Véran is an excellent partner for seafood, especially shellfish, as well as poultry or veal dishes served with creamy sauces. It also works beautifully with classic risottos and delicate fish preparations. Serve chilled at around 10–12°C; decanting is not necessary, though a few minutes in the glass will help the aromatics open up.
