Tasting Notes
In the glass, Diapason shows a luminous pale gold color, animated by a fine, persistent bead of tiny bubbles that speak to careful, long maturation on lees. The nose is immediately precise and chalk-driven, with aromas of lemon zest, green apple, freshly baked brioche and crushed oyster shell, layered with hints of white flowers, almond and a subtle saline lift.
On the palate, this Extra Brut Champagne is taut, linear and beautifully dry, with a racy backbone of acidity that frames concentrated citrus and orchard fruit. Notes of Meyer lemon, crisp pear and tart apple are joined by nuances of toasted hazelnut, pastry cream and wet stone. The finish is long, mouthwatering and very pure, with a lingering chalky minerality typical of Le Mesnil-sur-Oger. Thanks to its Grand Cru fruit and structured profile, Diapason has excellent aging potential, evolving over 5–10 years or more into deeper layers of brioche, honey and complex nuttiness while retaining its mineral core.
Production
Sourced from Chardonnay parcels planted around the Grand Cru village of Le Mesnil-sur-Oger in the Côte des Blancs, Diapason is rooted in some of the most prized chalk soils in Champagne. The cool climate and pure, white chalk subsoil give the wine its hallmark finesse, high-toned acidity and saline, mineral edge. Pascal Doquet is known for his meticulous, often organic-leaning viticulture, favoring low yields and careful hand harvesting at optimal ripeness to preserve delicacy and aromatics. In the cellar, the base wines are vinified with precision, typically in stainless steel and/or neutral vessels to safeguard freshness, followed by extended aging on the lees to build texture and complexity. The Extra Brut dosage is kept low to let the Grand Cru Chardonnay and the Mesnil terroir speak clearly, resulting in a Champagne of clarity, structure and finesse.
Food & Serving
Diapason is a superb partner for fine, delicately flavored dishes where its minerality and acidity can shine. Think oysters, shellfish platters, scallop carpaccio, sushi and sashimi, or simply prepared white fish with citrus and herbs. It also pairs beautifully with goat cheese, young creamy cheeses, caviar, and light poultry dishes, as well as refined canapés. Serve well-chilled at around 8–10°C (46–50°F) to highlight its precision and freshness; as it warms gently in the glass, more complexity will emerge. A brief, gentle aeration in the glass is generally sufficient, but for older bottles or particularly structured releases, a short 15–20 minute decant in a wide-bowled Champagne glass or white wine glass can help open up the aromatics.
