Tasting Notes
In the glass, Horizon presents a pale, luminous straw color with a delicate green tinge, laced with a fine, persistent mousse that forms a soft, creamy bead. The nose is pure and expressive: freshly cut lemon and green apple meet white flowers, chalk dust, and hints of brioche and almond from time on the lees. Subtle notes of pear, lime zest, and a gentle saline breeze add an inviting complexity.
On the palate, this Extra Brut Champagne is taut, linear, and deeply mineral, with crisp citrus and orchard fruit framed by a chalky backbone. Lively acidity drives the wine forward, while the lees aging adds a subtle creaminess and a touch of pastry and hazelnut on the mid-palate. The finish is long, dry, and mouthwatering, leaving impressions of citrus peel, crushed stones, and a delicate, savory salinity. Production
Horizon is sourced from Chardonnay grown on chalk and limestone-rich soils in the Champagne region, with a strong emphasis on the cooler, chalk-dominated terroirs that give Blanc de Blancs its hallmark finesse. Pascal Doquet works his vineyards organically, encouraging deep root systems and healthy biodiversity so the vines can fully express their origin. Grapes are harvested by hand at optimal ripeness, ensuring rigorous selection in the vineyard. In the cellar, the base wines are gently pressed and fermented in stainless steel and, in part, neutral vessels to preserve purity of fruit while adding subtle texture. Extended aging on the lees before disgorgement builds depth and fine mousse, and a very low, Extra Brut dosage is used to keep the wine bone-dry, allowing the minerality and natural concentration of the Chardonnay to shine.
Food & Serving
This Champagne’s tension and precision make it a superb match for oysters, razor clams, and simply prepared shellfish, as well as crudo, sashimi, and delicate white fish dishes. It pairs beautifully with fresh goat cheese, Comté, tempura vegetables, or light poultry and seafood-based starters. Serve well-chilled at 8–10°C (46–50°F) to highlight its freshness and minerality. A brief 10–15 minutes in the glass or a quick splash into a small decanter can help the aromatics open, but extended decanting is not necessary—this wine is built for clarity and vibrancy.
