Crafted by biodynamic vigneron Franck Pascal, this rosé marries precision, texture and energy in a style that is both gastronomic and deeply expressive. The cuvée ‘Tolerance’ is conceived as a celebration of diversity and harmony—an ode to love and to the beauty of differences living side by side, in the vineyard and at the table.
Tasting Notes
In the glass, Tolerance Rosé 2018 shows a delicate, luminous salmon-pink hue with fine, persistent bubbles forming a refined mousse. The color hints at its dual nature, blending white and red wine components for both freshness and depth.
The nose is immediately inviting, with ripe wild strawberries, redcurrants and raspberry coulis layered over notes of blood orange zest, white flowers and a subtle chalky minerality. With air, nuances of fresh brioche, almond and a gentle spice emerge, reflecting its extended lees aging.
On the palate, this Extra Brut rosé is dry, incisive and elegantly structured, with the juiciness of Pinot Meunier wrapped around the tension and finesse of Chardonnay. Crisp red berries, pomegranate and citrus are supported by a fine, chalk-driven backbone and a delicate, creamy texture from the bubbles. The finish is long, saline and mouthwatering, with a lingering impression of pink grapefruit and crushed stones. Production
Franck Pascal farms his vineyards in the Champagne region with a strong focus on biodiversity, working according to organic and biodynamic principles to allow the terroir to speak clearly. The vines, rooted in classic Champagne soils of chalk, limestone and clay, produce naturally concentrated grapes that balance ripeness with tension. Harvesting is done by hand, with strict selection in the vineyard to ensure only the healthiest bunches make it into the press. For this rosé, a blend of Pinot Meunier and Chardonnay is vinified with as little intervention as possible, often using indigenous yeasts and gentle pressing to preserve aromatics and purity. The rosé color and red-fruited character come from the careful incorporation of a still red wine component, bringing both hue and texture to the final blend. Extended maturation on the lees in bottle builds complexity and a fine, creamy mousse, while the Extra Brut dosage keeps the style dry, precise and food-friendly.
Food & Serving
This Champagne Rosé is wonderfully versatile at the table. It shines as an aperitif with charcuterie, smoked salmon, tuna tartare or simple canapés, and pairs beautifully with sushi, grilled prawns, scallops, or lightly spiced Asian dishes. Its red-fruited, mineral profile also flatters roast chicken, veal carpaccio, beetroot salads, goat’s cheese and soft cheeses with a bloomy rind. Serve well-chilled, ideally at 8–10°C (46–50°F), in a tulip-shaped Champagne glass to showcase the aromatics. A brief 10–15 minutes in the glass or an optional short decant in a wide carafe can help it open up, particularly if served with food or after a few years of aging.
Producer
Franck Pascal is one of Champagne’s respected grower-producers, known for his meticulous, biodynamic approach in the vineyards and his quest for purity and energy in the bottle. Working primarily in the Vallée de la Marne area, he farms his own parcels rather than buying fruit, giving him complete control from soil to cork. Rejecting heavy chemical use early on, Pascal turned to organic and biodynamic methods, focusing on soil vitality, low yields and handwork among the vines. His Champagnes are sought after for their intensity, precision and low-intervention character, and he has helped shape the modern image of terroir-driven, artisan Champagne that stands proudly alongside the region’s most established names.
