Tasting Notes
In the glass, Pacifiance Extra Brut shows a pale straw to light gold color, animated by a fine and persistent bead of bubbles. On the nose, it delivers lifted aromas of crisp green apple, lemon zest and white peach, layered with notes of chalk, fresh brioche, white flowers and a subtle nutty, saline edge.
The palate is taut, dry and beautifully structured, with the low dosage allowing the character of the fruit and soil to shine. Expect flavors of citrus (grapefruit, lemon), just-ripe stone fruit and pear, folded into hints of toasted almond, pastry and wet stone. The mousse is refined and creamy, balancing a vibrant line of acidity and a long, mineral-driven finish. Production
Sourced from Franck Pascal’s estate vineyards in the Champagne region of France, Pacifiance reflects the chalk and clay-limestone soils that define this part of the Marne. The vines are farmed with great care, following natural, low-intervention principles that prioritize soil health and biodiversity. Harvesting is done by hand, allowing rigorous selection of only the healthiest bunches at optimal ripeness. In the cellar, each variety is vinified separately, typically with gentle pressing and a controlled, largely natural fermentation to preserve aromatic nuance. The base wines are then blended across vintages to achieve balance and complexity, followed by secondary fermentation in bottle and an extended period of aging on the lees. A very low dosage at disgorgement classifies this as Extra Brut, emphasizing precision, freshness and terroir expression.
Food & Serving
This Extra Brut Champagne is a versatile partner at the table, particularly well-suited to refined, delicately flavored dishes. Pair it with oysters, shellfish platters, scallop crudo, sashimi or sushi, as well as lightly grilled fish, citrus-dressed ceviche, or goat’s cheese and fresh cheeses. It also works beautifully with simple canapés—blinis with smoked salmon, caviar or fine charcuterie. Serve well-chilled at around 8–10°C (46–50°F) to highlight its freshness and tension. A brief 10–15 minutes in the glass or in an open bottle is all the “decanting” it needs; this allows the aromas to open up without losing the fine, persistent mousse.
