Tasting Notes
Complantée shows a delicate, translucent color in the glass, with an elegant and inviting aromatic profile. Rather than power or obvious richness, the wine delivers purity and quiet complexity, with a finely etched finish and excellent balance. Production
This Extra Brut Grand Cru comes from a single parcel in Avize, where Pinot Noir, Pinot Meunier, Pinot Blanc, Arbane, Petit Meslier, and Chardonnay are interplanted in the traditional complantée style. The blend is based on equal parts 2017 and 2016, and the vines are vinified in neutral oak to preserve texture and site expression. With a dosage of 5 g/L and a low-intervention, terroir-driven approach, the wine is crafted to highlight the character of the vineyard rather than cellar influence.
Food & Serving
Complantée pairs well with refined dishes such as sashimi, shellfish, roast poultry, or lightly seasoned veal, as well as aged hard cheeses. Serve chilled at around 8–10°C to show its aromatic detail and freshness. Decanting is generally not necessary, but a few minutes in the glass can help the wine open and reveal its layered perfume.
