Crafted without dosage and sourced from a single, meticulously farmed plot, it offers a pure, unadorned look at chalky Grand Cru terroir in a superb vintage. Named after the horse that works the vineyard, Vénus is both a tribute to tradition and a benchmark in precision winemaking.

Tasting Notes
In the glass, the 2019 Vénus shows a luminous, pale gold color with a fine, persistent bead that testifies to its careful élevage and long lees aging. The nose opens with striking minerality—crushed chalk and sea breeze—wrapped around notes of lemon zest, green apple, white peach, and fresh almond, gradually evolving toward brioche, hazelnut, and delicate white flowers as it takes on air. On the palate, this is taut, direct, and intensely focused: a true Brut Nature with no dosage, yet perfectly balanced by ripe 2019 fruit. Expect a mouthwatering core of citrus and orchard fruits—Meyer lemon, crisp pear, and tangy grapefruit—layered with saline notes, shaved fennel, and subtle spice from oak élevage. The texture is both creamy and chiselled, with a long, echoing finish marked by chalk dust and citrus oil. Still youthful in 2019 guise, it has excellent aging potential; drink now for its energy and tension, or cellar 8–15 years to see deeper nutty, brioche and honeyed complexity emerge.

Production
Vénus comes from a single, walled plot in Avize Grand Cru, rooted in deep, pure Campanian chalk—one of the most prized terroirs in the Côte des Blancs. This tiny parcel is farmed by horse—Vénus—rather than tractor, preserving soil structure and encouraging deep root penetration, with no herbicides or chemical fertilizers. Grapes are hand-harvested at optimal ripeness, carefully sorted, and gently pressed. Fermentation takes place in oak barrels with indigenous yeasts, followed by an extended élevage on the lees to build texture and complexity without masking the terroir. The wine undergoes secondary fermentation in bottle and sees several years of lees aging before disgorgement, with no fining, filtration, or dosage, yielding a Brut Nature of uncompromising purity.

Food & Serving
This Champagne is a natural partner for refined, mineral-driven dishes: think oysters on the half shell, sea urchin, scallop carpaccio, turbot with beurre blanc, or simply grilled lobster with lemon and herbs. It also shines alongside delicate sashimi, caviar, or young, slightly tangy goat cheeses that echo its chalky edge. Serve well-chilled but not icy, around 9–11°C (48–52°F), to allow the aromatics and texture to unfold. A short decant in a wide-bowled white wine glass—or simply 10–15 minutes in the glass—can help the 2019 Vénus open up, revealing its layered complexity and saline depth.
