Tasting Notes
In the glass, it shows a deep, dark color that hints at the intensity within. The nose is layered and expressive, unfolding with blackcurrant, red currant, fresh-baked pastry, clove, sage, leather, almonds, dried spices, pepper, and a nuanced finish of bittersweet cocoa and orange peel. The palate is rich and concentrated, yet lifted by vibrant acidity and finely knit tannins. Dark berry fruit leads the way, followed by savory spice and a long, polished finish. Thanks to the balance of ripe fruit, fresh acidity, and concentrated tannic structure, this wine has excellent aging potential and should develop beautifully over the coming years.

Production
This cuvée is made from 82% Cabernet Sauvignon, 10% Cabernet Franc, 5% Petit Verdot, 2% Malbec, and 1% Merlot, sourced from four different vineyards, including Pahlmeyer Estate Vineyard. The 2021 growing season in California delivered low yields, small berries, and naturally high concentration, while the steady, mild weather allowed for slow, complete ripening. A distinctive whole-cluster fermentation approach was used, helping preserve more color, texture, and aromatic complexity in the finished wine.

Food & Serving
This Cabernet Sauvignon is a natural match for grilled ribeye, beef tenderloin, braised short ribs, roasted lamb, or mushroom-based dishes with depth and umami. It also works well with aged hard cheeses. Serve at around 16-18°C, and decant for a couple of hours if drinking now to allow the wine to खुलen fully and show its aromatic detail.
