Tasting Notes
In the glass, the Classic Bio 2019 shows a bright pale gold hue, threaded with silver reflections and a fine, delicate mousse that forms a persistent bead. The nose is fresh yet inviting, with aromas of ripe yellow apple, warm blossom honey and mandarin zest, layered with subtle notes of stone fruit and a gentle, pastry-like yeast character. On the palate it is juicy, rounded and fruit-forward, offering flavours of yellow peach, pineapple and orchard fruit over a lively citrus backbone. The mousse is soft and well-integrated, supporting a mouthwatering, lemony finish that keeps the wine feeling light, summery and moreish. Enjoyable now for its vibrant, uncomplicated charm, it also has the structure and acidity to develop added complexity over the next 3–5 years.

Production
Oxney Organic Estate lies in Sussex, in the south of England, where cool maritime influences and long, mild growing seasons are ideal for producing refined sparkling wines. The organically farmed vineyards are planted primarily to the classic Champagne trio – Chardonnay, Pinot Noir and Pinot Meunier – on well-drained soils that help concentrate flavour while preserving high natural acidity. Grapes are harvested by hand to ensure only the healthiest fruit reaches the winery. The Classic Bio 2019 is made using the traditional method, with a gentle pressing of whole bunches, cool fermentation to protect delicate aromatics, and a secondary fermentation in bottle that creates its fine mousse. Extended time on the lees adds subtle autolytic complexity, while dosage is kept in balance to emphasise freshness and precision.

Food & Serving
This English sparkling wine is a natural match for light, summery dishes: think oysters, shellfish platters, sushi, ceviche, or simply grilled white fish with herbs and lemon. It also pairs beautifully with soft cheeses, smoked salmon blinis, or delicate vegetable tempura, and can be enjoyed on its own as an elegant aperitif. Serve well-chilled at around 8–10°C. A brief 10–15 minutes in the glass is enough for the wine to open up; decanting is not necessary, as its finesse and aromatics show best straight from the bottle.
