Orin Swift Cellars, Papillon MG, 2019

Orin Swift Cellars’ Papillon 2019 is a bold, richly layered Napa Valley red that brings together Cabernet Sauvignon, Merlot, Petit Verdot and Malbec in a seamless Bordeaux-inspired blend. Created by celebrated winemaker Dave Phinney, it combines power, polish and attitude in a style that feels both luxurious and unmistakably modern.

Tasting Notes
In the glass, Papillon shows a deep, dark color that hints at its intensity. The nose opens with blackcurrant, blackberry, anise and lavender, followed by a more savory layer that builds with air. On the palate, it is concentrated and expressive, with fine-grained tannins that bring structure and a subtle tea-like edge reminiscent of Earl Grey. Notes of dark cocoa, spice and sweet oak from élevage add depth to a long, polished finish. This is a wine with excellent cellaring potential and should develop beautifully over the next several years.

Production
Papillon 2019 is sourced from carefully selected vineyard sites across Napa Valley, bringing together fruit that contributes ripeness, structure and aromatic complexity. The wine was aged for 16 months in French oak barrels, 52% of which were new, adding texture, spice and a refined layer of oak influence.

Food & Serving
This is an excellent match for grilled ribeye, braised short ribs, lamb with rosemary, or rich mushroom dishes. Serve at around 16–18°C and consider decanting for at least 1 hour to allow the wine’s aromatics and structure to खुल fully.
