Opera Viticoltori in Valdicembra Metodo Classico Pinot Nero Rosé Opera Noir 2017 is an elegant traditional-method sparkling rosé from the cool Alpine slopes of Trentino Alto Adige. Crafted entirely from Pinot Nero, it marries mountain freshness with the depth and finesse of long lees aging. This vintage-dated cuvée showcases the precision and craftsmanship for which Val di Cembra’s growers are increasingly renowned.
Tasting Notes
In the glass, Opera Noir 2017 shows a delicate onion-skin to pale coral pink hue, with a fine and persistent perlage that forms a creamy crown. The nose opens with wild strawberries, crushed raspberry and redcurrant, layered over notes of pink grapefruit, rose petals and a subtle hint of brioche and hazelnut from maturation on the lees.
On the palate, the wine is dry, taut and vividly fresh, with Pinot Nero’s red-berry core framed by citrus, pomegranate and a touch of blood orange. The mousse is refined and silky, carrying savory mineral notes and a gentle, chalky grip through the mid-palate. A clean, lingering finish shows saline freshness and a faint hint of spice. Enjoyable now for its vibrancy and complexity, it has the structure to evolve gracefully for several more years in bottle under proper cellaring conditions.
Production
Sourced from steep, terraced vineyards in the Val di Cembra, this Metodo Classico Pinot Nero Rosé reflects a mountain terroir of poor, stony soils and pronounced day–night temperature swings that preserve natural acidity and aromatic precision. Grapes are harvested by hand at optimal ripeness for sparkling wine, with careful selection in the vineyard and at the winery. After a gentle pressing and controlled fermentation of the base wine, the traditional method (Metodo Classico) second fermentation takes place in bottle, followed by an extended period resting on the lees to build texture, complexity and fine bubbles. A restrained dosage keeps the focus on purity, minerality and the distinctive character of Pinot Nero from this Alpine valley.

This refined rosé sparkling is a versatile partner at the table: pair it with salmon tartare, tuna carpaccio, prosciutto and speck from the region, sushi, grilled shrimp, or delicate poultry dishes. It also works beautifully with soft cheeses, vegetable tempura and refined antipasti. Serve well-chilled at about 6–8°C (43–46°F) to highlight its precision and freshness; a brief opening in the glass is usually sufficient, and decanting is not necessary, though pouring into generous flutes or white-wine glasses will best showcase its aromas.
