The 45% alcohol is well integrated, giving a warming yet refined mouthfeel and a long, clean finish with notes of white pepper and almond skin. Production
This grappa is crafted from carefully selected Merlot pomace sourced from vineyards around Lake Garda in Veneto, an area known for its mild climate, cooling lake breezes and mineral-rich morainic soils. The grapes are hand-harvested for the estate’s wines, and the fresh pomace is quickly transferred to the distillery to preserve aroma and purity. Using modern, temperature-controlled equipment, the distillation is carried out in small batches—typically in copper or copper-lined stills—to extract the most delicate, varietal aromas while eliminating harsh components. The resulting distillate is refined, rested for balance and clarity, then bottled at 45% to highlight both the grape’s character and Olivini’s precise, quality-focused approach.

Today, the estate is run by three entrepreneurial siblings—Giorgio, Giordana and Giovanni—who have inherited a deep passion for the region’s potential from previous generations.
