Olivier Leflaive’s Chablis Les Deux Rives 2023 is a bright, mineral-driven white Burgundy that captures the clean, expressive style Chablis is known for. Sourced from 12 parcels on both sides of the Serein River, it brings together freshness, finesse, and a clear sense of place in a wine that feels both classic and precise.
Tasting Notes
In the glass, it shows a pale, luminous color with a brisk, vibrant character. The nose opens with green apple, lemon zest, and delicate white flowers, underpinned by a subtle chalky note that speaks to its Chablis origin.
On the palate, the wine is crisp and lively, with flavors of apple, citrus, and a distinct mineral edge of limestone and chalk. Its fresh acidity gives the wine energy and balance, making it very appealing in its youth, while also suggesting a short to medium-term cellaring window if you prefer a rounder profile.
Production
This wine is made from Chardonnay grown on calcareous soils in Chablis, with fruit drawn from 12 parcels located on either side of the Serein River. The vineyards are farmed according to sustainable principles, helping preserve the clarity and purity of the fruit. After harvest, the grapes are pressed immediately upon arrival at the winery, and the wine then matures for 7 months before bottling, with only a small proportion aged in oak.
Food & Serving
A natural match for oysters, fresh fish, shellfish, and other seafood dishes where the wine’s acidity and minerality can shine. Serve chilled, ideally around 8-10°C, and decanting is not necessary.
