Tasting Notes
In the glass, the wine shows a bright, polished character with delicate aromas of citrus blossom, green apple, crushed stone, and a touch of almond. Hints of wet slate and saline minerality add extra complexity, giving the bouquet a cool, focused feel. The palate is vibrant and exact, driven by almost electric acidity that carries pure fruit and a long, mineral finish. Light oak influence frames the wine without masking its energy, and the restrained style suggests it will continue to develop gracefully over the next few years, gaining additional texture and nuance.

Production
The grapes come from Rancho Ontiveros Vineyard in Santa Maria Valley, where morning fog, coastal winds, and a cool maritime climate allow for slow, even ripening and naturally lively acidity. The fruit is hand-harvested and gently pressed, then fermented spontaneously with native yeast in neutral French oak barrels. No bâtonnage and only limited malolactic fermentation are used, preserving freshness and clarity, and the wine is aged for 11 months before being bottled unfined and with minimal filtration.

This Chardonnay pairs beautifully with dishes that complement its freshness and mineral edge, such as grilled white fish, scallops, roast chicken, lobster, or risotto with spring vegetables. Serve it chilled, ideally around 10–12°C, and decanting is not necessary.
