Nikolaihof’s Riesling vom Stein Federspiel Bio 2008 Late Bottled is a rare glimpse into how great Wachau Riesling was traditionally enjoyed: after years of patient aging in cask and bottle. Rather than rushing this wine to market, Nikolaihof allowed it to evolve slowly, releasing it only when the Riesling’s full character and complexity had emerged. The result is a refined, dry Austrian white that showcases both the brilliance of the 2008 vintage and the estate’s unwavering commitment to time-honored craftsmanship.

Tasting Notes
In the glass, this late-released Federspiel shows a mature, shimmering lemon-gold color with subtle green reflections at the rim, hinting at both freshness and age. The nose is layered and expressive: preserved lemon, ripe peach and baked apple mingle with notes of chamomile, wet stone, beeswax and a gentle herbal lift—an aromatic signature of Nikolaihof’s biodynamic approach. Hints of honeycomb, smoke and dried flowers emerge with air, adding further complexity. On the palate, the wine is dry, precise and beautifully balanced, with the elegance you expect from Federspiel but the depth you only get from extended aging. Citrus zest and stone fruit are framed by a pronounced mineral spine—think cold river stones and salt—supported by lively, well-integrated acidity. With time in the glass, more savory and tertiary nuances appear: lanolin, subtle nuts and a fine herbal bitterness on the finish. The structure and acidity suggest that, even at this age, the wine still has several years of graceful drinking ahead, rewarding careful cellaring and slow enjoyment.

Production
The Riesling vom Stein comes from steep, terraced vineyards above the Danube in the Wachau, where thin, rocky soils rich in gneiss and weathered primary rock (“Stein”) force the vines to dig deep, concentrating flavor and mineral tension. Nikolaihof farms these sites biodynamically (Demeter-certified), with low yields, hand work in the vineyard and manual harvesting to ensure only perfectly ripe, healthy grapes are brought in. Fermentation is carried out with indigenous yeasts in large, old oak casks in the estate’s ancient cellars, followed by extended aging on fine lees in neutral, often decades-old foudres. For this “Late Bottled” release, the wine remained significantly longer in cask and/or bottle before release, allowing it to develop complexity and aromatic nuance while preserving its natural freshness and energy.

Food & Serving
This mature, dry Riesling is a superb partner for refined, subtly aromatic dishes: think freshwater fish (trout, char) with herbs, sashimi or carpaccio of white fish, grilled prawns, or poached chicken with lemon and tarragon. Its savory, mineral character also works beautifully with Wiener schnitzel, roasted root vegetables, aged mountain cheeses, and delicately spiced Asian cuisine—particularly dishes featuring ginger, lemongrass or light soy. Serve at about 10–12 °C (50–54 °F) to emphasize both freshness and complexity. Decanting for 30–45 minutes is recommended to let the mature aromatics fully open, especially if the wine has been resting a long time in bottle.
