Sourced from high-altitude vineyards in northern Piedmont, the Jefferson Spumante Rosé 2020 benefits from rocky, mineral-rich soils and a cool Alpine influence that preserves acidity and aromatics. The grapes—predominantly Nebbiolo, often with a touch of other local varieties—are harvested by hand to ensure optimal ripeness and careful selection of bunches destined for sparkling wine. A gentle pressing extracts just enough color from the skins to achieve its delicate rosé hue, followed by a cool primary fermentation in stainless steel to retain freshness and purity of fruit. The wine then undergoes a traditional method secondary fermentation in bottle, where it rests on its lees to develop texture and subtle autolytic notes before disgorgement and a carefully judged dosage to keep the profile firmly dry and gastronomic.

This refined rosé spumante is a versatile partner at the table. It pairs beautifully with antipasti, crudo, shellfish, sushi, and delicate fish dishes, as well as charcuterie, vitello tonnato and lightly grilled vegetables. It also works well with soft cheeses and is an excellent choice for aperitivo. Serve well-chilled at about 8–10°C (46–50°F) to highlight its freshness and fine bubbles.
