Production
The Chardonnay grapes for Moser Trento Riserva Tracce Extra Brut 2011 come from selected hillside vineyards in Trentino Alto Adige, where cool nights, warm days and well-drained, mineral-rich soils enhance aroma, acidity and finesse. The fruit is harvested by hand at optimal ripeness to preserve freshness and purity, with careful selection both in the vineyard and at the winery. Vinification follows the classic metodo classico (traditional method): a gentle pressing, temperature-controlled fermentation of the base wine, and secondary fermentation in bottle, where the wine matures on its lees for an extended period to build texture, complexity and fine mousse before disgorgement and a very low dosage in the Extra Brut style.
Food & Serving
This Trentodoc Riserva is a versatile sparkling wine that shines at the table. Pair it with delicate seafood dishes such as oysters, scallops, sushi or lightly grilled white fish, as well as fine charcuterie, aged cheeses, risotto with shellfish, or poultry in light cream sauces. Serve well chilled, ideally around 8–10°C (46–50°F), to highlight its tension and aromatic precision. A brief decanting is not necessary, but pouring the first glass and allowing the bottle to open in the glass over a few minutes will let the wine reveal its full range of aromas.
