The nose is expressive and pure, offering notes of ripe red cherries, crushed raspberries and wild strawberries, layered with hints of violet, rose petal, subtle spice and a touch of earth and chalky minerality. On the palate, the wine is medium-bodied and silky, with finely etched tannins and a lively, refreshing acidity that keeps the red fruit notes vibrant and precise. At Domaine Vincent et Sophie Morey, the vineyards are farmed with sustainable, nature‑respectful practices, with careful soil work and close attention to vine health throughout the year. The grapes are harvested by hand at optimal ripeness to preserve aromatic precision, then sorted before traditional Burgundy vinification: gentle extraction to respect the fine Pinot Noir tannins, followed by élevage in French oak barrels. This combination of meticulous vineyard work and barrel aging allows the wine to express the character of Santenay and the specific terroir of Les Hates with clarity and balance.

Domaine Vincent et Sophie Morey was founded in 2006 and is based in Chassagne-Montrachet in the heart of the Côte des Blancs in the Côte d’Or. Drawing on deep family roots in Burgundy, Vincent and Sophie have built an estate that now covers around 20 hectares across some of the region’s most respected villages, including Santenay, Chassagne-Montrachet, Saint-Aubin, Puligny-Montrachet and Cheilly-lès-Maranges, with a total of 23 different appellations in their range. The domaine is known for combining traditional Burgundian know-how—hand-harvesting, careful barrel vinification and patient élevage—with sustainable, environmentally conscious viticulture.
