In the cellar, the base wines are vinified separately, often in temperature-controlled stainless steel to preserve freshness, with possible partial aging on lees to build texture. The cuvée then undergoes secondary fermentation in bottle using the traditional Metodo Classico method, followed by lengthy aging on the lees to develop complexity and finesse. Being Pas Dosè, no dosage is added at disgorgement, allowing the natural character of the vintage, terroir, and grapes to shine through.
