Crafted primarily from Chardonnay with a supporting role from Pinot Nero, this cuvée delivers depth, precision and a luxurious texture that will appeal to Champagne lovers and Italian wine enthusiasts alike. As a vintage-dated Franciacorta from one of the region’s benchmark producers, it captures the character of the 2012 harvest with remarkable clarity and finesse.

Tasting Notes
In the glass, Cabochon Stellato Brut 2012 shows a luminous, deep straw-yellow color with golden reflections and a fine, persistent perlage that forms a lasting crown. On the nose, it opens with layers of ripe citrus, baked apple and pear, evolving into brioche, toasted hazelnut, almond cream and subtle vanilla from extended lees aging. Hints of white flowers, chamomile, crushed chalk and a gentle spiciness add complexity and elegance. The palate is full and structured yet vibrant, combining a creamy mousse with a taut, mineral backbone. Flavors of lemon curd, candied citrus peel, stone fruit and yellow apple are seamlessly integrated with notes of pastry, toasted bread and roasted nuts. The Chardonnay brings finesse and length, while the Pinot Nero contributes body and subtle red-fruit undertones. The finish is long, savory and saline, with a lingering impression of citrus zest and brioche. With its concentration and acid structure, the 2012 vintage has excellent aging potential and will continue to develop greater complexity over the next 5–8 years, if stored well.

Production
Franciacorta’s rolling hills in Lombardy, south of Lake Iseo, are characterized by glacial morainic soils rich in stones and minerals, which give Cabochon Stellato its tension, salinity and depth. Grapes are carefully hand-harvested at optimal ripeness from selected parcels, ensuring only the finest bunches make it into this top cuvée. After gentle pressing, the base wines are fermented in temperature-controlled conditions, with a portion typically aged in oak to build texture and complexity. The final blend of Chardonnay and Pinot Nero is then bottled for a traditional-method second fermentation, followed by an extended period of aging on the lees—significantly longer than the minimum required for Franciacorta—before disgorgement and dosage, resulting in a wine of great refinement and complexity.

Food & Serving
This vintage Franciacorta is an outstanding choice for refined dishes such as oysters, scallops, and delicate crudo, as well as lobster, butter-poached fish, or rich seafood risotto. It also pairs beautifully with fine poultry, veal tartare, aged Parmigiano-Reggiano, and truffle-accented dishes. Serve well-chilled but not icy, ideally at 8–10°C (46–50°F), to allow its aromatic complexity to unfold. Decanting is not necessary, but opening the bottle 10–15 minutes before serving and pouring into quality tulip-shaped sparkling wine glasses will enhance both the nose and palate.
