Monte Rossa Cabochon Doppiozero Brut Nature 2018 is a flagship Franciacorta from one of the region’s most respected producers, crafted without added dosage for a pure, incisive expression of Chardonnay and Pinot Noir. Sourced from some of the finest Franciacorta crus and aged for more than 48 months, it delivers the depth, precision, and unmistakable elegance that have made Cabochon a benchmark cuvée.

Tasting Notes
In the glass, it shows a refined, luminous appearance with a persistent, fine mousse. The nose is layered and expressive, with notes of citrus zest, white flowers, ripe orchard fruit, toasted bread, and subtle mineral tones. The palate is dry, focused, and beautifully structured, with impressive intensity and a long, precise finish. The absence of added sugar highlights its tension and clarity, while extended lees aging brings complexity, breadth, and a creamy nuance. It has excellent aging potential and will continue to gain nuance over time.

Production
Produced in Lombardy’s Franciacorta zone, this wine draws on fruit from top crus selected for their balance, finesse, and mineral expression. The grapes are carefully harvested and vinified to preserve freshness and site character, then the wine spends more than 48 months on lees, building complexity and depth before disgorgement with no dosage added.

Food & Serving
Ideal with oysters, sashimi, delicate shellfish, crudo, grilled sea bass, or refined dishes featuring white truffle and fresh herbs. Serve well chilled at 8–10°C; decanting is not recommended, though a few minutes in the glass will help the wine open and reveal its full aromatic range.
