Traditional Vinsanto production involves harvesting the white grapes—often Trebbiano and Malvasia—by hand at full ripeness, then carefully laying them out in well‑ventilated rooms to dry for several months. This natural appassimento process concentrates sugars and flavors. The semi‑raisined grapes are then gently pressed, and the dense must is transferred to small oak or chestnut barrels (caratelli), where it ferments slowly and ages for years under a protective film of yeast. The result is a deeply complex, naturally sweet wine that reflects patient, artisanal winemaking.
