Monte Chiaro Primum Vinum 2019 ØKO is the estate’s signature “Supertuscan” – a pure Sangiovese that showcases the full potential of this noble Tuscan grape. Produced from organically grown grapes and crafted only from the winery’s best, older vineyards, it delivers depth, elegance and a distinctly modern take on classic Tuscan character. Tasting Notes
In the glass, Primum Vinum 2019 ØKO presents a deep, garnet-red hue with a vibrant rim, signaling both concentration and freshness. The nose is intense and layered, opening with ripe blackberry and raspberry, followed by notes of freshly ground coffee, pipe tobacco and dark chocolate. Subtle hints of spice and toasted oak weave through the bouquet, reflecting its extended time in large, lightly toasted barrels.
On the palate, this is a full-bodied, “thoroughbred” Tuscan red with generous richness and beautifully polished tannins. The dried-grape component adds extra concentration and a velvety texture, while flavors of dark, ripe berries are supported by cocoa, espresso and a savory, tobacco-like complexity. The acidity is finely balanced, giving the wine lift and length, and the finish is long, smooth and persistent. With 24 months in oak and additional bottle aging before release, this vintage is already harmonious but has solid aging potential; stored correctly, it should evolve gracefully for 8–12 years from the vintage, gaining even more tertiary complexity.
Production
Primum Vinum is sourced from three single vineyards in the hills just outside Siena, in the heart of Tuscany’s Chianti Colli Senesi area. Here, the combination of sun-drenched slopes, well-drained soils and cooling breezes provides an ideal terroir for Sangiovese, especially from vines that are at least 15 years old, with naturally lower yields and greater concentration. The grapes are hand-harvested and carefully selected to ensure only the best clusters make it into the final wine. After picking, the grapes are partially dried for 25 days – a technique that deepens aroma and structure – before gentle pressing. Fermentation is followed by a long maturation in 500-liter, lightly toasted oak barrels for 24 months, and the wine is then refined in bottle for a further 6 months before release, resulting in a complex yet refined expression of organic Sangiovese.
Food & Serving
This powerful yet elegant Supertuscan is a superb partner for game dishes, beef tartare, grilled or roasted beef and lamb, as well as mature, hard cheeses. Its richness and dark-fruited profile complement the savory depth of venison, wild boar ragù or herb-crusted lamb, while the polished tannins and chocolate-coffee notes play beautifully against aged Pecorino or Parmigiano Reggiano. Serve at 18–20°C in large Bordeaux or Burgundy-style glasses to allow the bouquet to fully open. Decanting 1–2 hours before serving is recommended, especially for younger bottles, to soften the tannins further and unlock the wine’s full aromatic complexity.
