Tasting Notes
In the glass, Monsupello Brut Metodo Classico typically shows a pale straw-yellow hue with brilliant clarity and a very fine, persistent perlage – a hallmark of long lees-aging. On the nose, expect lifted aromas of citrus zest, green apple, white flowers, and subtle notes of fresh bread crust or brioche, with a delicate mineral line in the background. The palate is dry, crisp, and well-balanced, with lively acidity and a refined, creamy mousse. Flavors echo the nose with lemon, apple, and pear, often joined by hints of almond and light pastry from extended contact with the lees. The finish is clean, refreshing, and pleasantly lingering, making it as suitable for an aperitif as it is for the table. Enjoyable now for its energy and freshness, it also has the structure to evolve gracefully over the next few years, gaining a touch more complexity and softness with short-term aging.

Production
Hailing from Lombardy, a region known for its rolling hills and cool, ventilated climate, Monsupello sources grapes from well-exposed vineyards that benefit from significant day–night temperature swings. This terroir helps preserve acidity and aromatic intensity—ideal conditions for quality sparkling wine. Grapes are picked by hand at optimal ripeness, with an emphasis on health and precision in the vineyard. In the cellar, Monsupello employs the Metodo Classico (traditional method): the base wines undergo a first fermentation in tank, followed by a second fermentation in bottle and extended aging on the lees to build texture, finesse, and complexity before disgorgement and dosage.

Food & Serving
Monsupello Brut Metodo Classico is a versatile sparkling wine that pairs beautifully with oysters, shellfish, crudo, sushi, and delicate white fish dishes, as well as light appetizers, cured meats, and soft cheeses. It also works well with tempura, vegetable tartlets, and simple pasta with seafood. Serve well-chilled at around 6–8°C (43–46°F) to highlight its freshness and fine bubbles. Decanting is not necessary; simply open the bottle a few minutes before serving and pour into slender white wine or traditional flute glasses to best appreciate its aromatic profile and effervescence.
