Crafted from Malvasia del Lazio, Trebbiano and Verdicchio Bianco, it offers a soulful, textural expression of central Italy far removed from commercial convention. Ruscum has become a cult favorite among natural wine lovers for its purity, gentle oxidation and honest, handcrafted character that reflects both place and monastic life.
Tasting Notes
In the glass, Coenobium Ruscum 2024 shows a deep straw to light amber hue, often slightly hazy, signalling its minimal intervention approach and extended skin contact. The nose is unusually complex for a wine of such modest origins: notes of chamomile, dried apricot, orange peel and beeswax mingle with hints of wild herbs, fennel seed, bruised apple and a subtle nuttiness.
On the palate, Ruscum is savoury and textural rather than overtly fruity. Expect flavours of dried citrus, yellow stone fruits, apple skin and herbal tea, layered with gentle oxidative tones, a whisper of honey and a saline, almost brothy minerality. The skin contact brings a light but persistent tannic grip, giving the wine structure and a pleasantly bitter, amaro‑like twist on the finish. Acidity is fresh but not sharp, creating a calm, contemplative balance. While delicious on release, the 2024 vintage should develop further complexity over 3–5 years, gaining more honeyed, nutty and herbal nuance with time in bottle.

The vineyards of Monastero Trappiste Vitorchiano sit on volcanic soils in the hills of northern Lazio, where the dark, mineral-rich terrain and mild, breezy climate support slow, even ripening of Malvasia del Lazio, Trebbiano and Verdicchio Bianco. Grapes are typically harvested by hand by the nuns, with careful selection in the vineyard and at the monastery to preserve healthy, flavour-filled fruit. Coenobium Ruscum is vinified in a deliberately simple, traditional way: the must ferments with indigenous yeasts on the skins for an extended period, extracting color, texture and aromatics, before ageing in neutral vessels (usually large, old casks or concrete) with minimal intervention, very low or no temperature control, and only a small sulphur addition, if any, at bottling. The result is an authentic, lightly oxidative skin-contact white that speaks clearly of its volcanic terroir.

Coenobium Ruscum 2024 is a versatile table wine that shines with rustic, flavourful dishes. It pairs beautifully with grilled or roasted poultry, herb‑roasted pork, charcuterie, aged and semi‑firm cheeses, or hearty vegetarian plates such as roasted root vegetables, caramelised fennel, mushroom dishes and chickpea or lentil stews. Its gentle tannin and bitter twist work superbly with dishes featuring olive oil, wild herbs, anchovies or cured fish, as well as with umami‑rich Japanese or Korean small plates. Serve at 12–14°C; too cold and the aromatics will hide, too warm and the oxidative notes may dominate. A brief decant of 20–30 minutes, or simply opening the bottle in advance, helps the wine unfurl its layered, herbal and citrus complexity.
