Monastero Trappiste Vitorchiano Coenobium 2024 is a quietly iconic white wine from the hills of Lazio, crafted by Trappist nuns with a devotion that shows in every glass. This is not a flashy wine, but a deeply characterful, textural blend of Trebbiano, Malvasia del Lazio, and Verdicchio Bianco that has become a cult favorite among natural and artisanal wine lovers. Guided for decades by the Bea family (of Paolo Bea fame), Coenobium has helped put this small monastic community and its unique terroir firmly on the map.

Tasting Notes
In the glass, Coenobium 2024 typically shows a pale to medium golden hue with a gentle haze, reflecting its minimal-intervention, unfiltered style. The nose is quietly compelling: notes of chamomile tea, wild herbs, orange zest, and yellow apple mingle with hints of fennel seed, almond skin, and a distinct stony, volcanic edge. As it opens, subtle floral tones and a touch of beeswax or lanolin often emerge. On the palate, the wine is textural and dry, with a fine grip from skin contact and a savory, almost saline undercurrent. Expect flavors of ripe citrus, pear, and stone fruit layered with herbaceous nuances, green almond, and gentle spice. The finish is long, slightly bitter in a pleasantly tonic way, and very moreish, inviting another sip. While Coenobium is typically enjoyed young for its vibrancy and freshness, it can evolve gracefully over 3–5 years, gaining complexity, a more pronounced honeyed and nutty character, and a mellowed texture.

Production
The vineyards surrounding the Monastero di Vitorchiano lie on volcanic soils in the Lazio hills, north of Rome, giving the grapes a natural backbone of minerality and freshness. The nuns tend the vines with great care, following organic principles, and harvest is done by hand to ensure only healthy, perfectly ripe clusters of Trebbiano, Malvasia del Lazio, and Verdicchio Bianco make it to the cellar. In the winery, the approach is intentionally simple and traditional: the must ferments spontaneously with native yeasts, often with a period of skin contact that gives the wine its distinctive texture and subtle amber-golden tone. Aging takes place in neutral vessels (usually concrete or old wood), with minimal intervention and very low additions of sulfur, and the wine is bottled unfiltered to preserve its natural character.

Food & Serving
Coenobium 2024 is an exceptionally versatile food wine, particularly well suited to Mediterranean cuisines. It shines with grilled or roasted vegetables, simple fish dishes, shellfish, and seafood pastas, as well as fritto misto, salumi, and soft to semi-firm cheeses. It also pairs beautifully with herb-driven dishes—think fennel, sage, rosemary, artichokes, and chickpeas—as well as lighter poultry preparations. Serve at about 10–12 °C (50–54 °F) to balance freshness and aromatic expression. A brief decant of 15–30 minutes, or simply opening the bottle a little ahead of time and pouring into larger white wine glasses, helps the wine stretch out and reveal its layered, savory complexity.
