Tasting Notes
In the glass, it typically shows a bright garnet color with ruby reflections, a hallmark of youthful Barolo. The nose is layered and expressive, with notes of rose petals, red cherry, wild strawberry, licorice, dried herbs, and subtle earthy tones, often gaining complexity with air. On the palate, this is a wine of poise and structure, combining vivid red fruit with firm, finely knit tannins and fresh acidity. Expect flavors to unfold gradually, with mineral nuances and a long, savory finish. While approachable with decanting in its youth, it has the concentration and balance to age gracefully for many years.

Production
Parafada is one of the respected cru sites in the Barolo zone, where the combination of elevation, marl-rich soils, and excellent sun exposure helps Nebbiolo achieve both aromatic finesse and structural backbone. Fruit is typically harvested by hand at optimal ripeness to preserve the variety’s natural freshness and complexity. Vinification follows a traditional Barolo approach, with controlled fermentation and maceration designed to extract aroma, color, and tannin while preserving elegance. The wine is then aged in oak to integrate its structure and develop the layered complexity that defines great Barolo.

Food & Serving
Barolo’s firm structure and savory profile make it an excellent match for slow-braised meats, roast lamb, truffle dishes, aged cheeses, and rich mushroom-based pastas. Serve at around 16–18°C, and consider decanting for at least 1–2 hours when opening it young to allow the aromas and tannins to open fully.
