Milan Nestarec WTB 2021 is a vibrant, skin‑contact Grüner Veltliner that shows just how exciting Czech natural wine can be. Working from his home region of Velkopavlovická, Nestarec takes this familiar Austrian variety and gives it a bold, textural twist as an “orangevin” with real character. Made in very small quantities, it’s a soulful, minimal‑intervention wine that speaks clearly of both grape and place.

Tasting Notes
In the glass, WTB 2021 sits somewhere between deep straw and pale amber, lightly hazy in the most honest, unfiltered way. The nose is immediately expressive: think ripe yellow apple, quince, crushed pear skin and citrus oil, layered with white tea, chamomile, and a gentle herbal/spicy note typical of Grüner Veltliner—white pepper, dried herbs and a faint touch of honey and lanolin. On the palate, the wine is dry, textural and energetic. The skin contact brings a pleasant, fine tannic grip that frames flavors of stone fruit, baked apple, mandarin peel and a subtle, savory nuttiness. There’s a line of saline minerality and zippy acidity that keeps everything fresh and food‑friendly, with a long, slightly pithy finish. While it’s delicious now for its vivid fruit and texture, it can easily handle another 2–4 years in bottle, gaining more savory, tea‑like and oxidative complexity along the way.

Production
The grapes for WTB 2021 come from organically farmed vineyards in the Velkopavlovická sub‑region of Moravia, where loess, clay and limestone soils give Grüner Veltliner both ripeness and a firm mineral backbone. Yields are kept modest, and harvesting is done by hand to ensure only clean, ripe bunches reach the cellar. In true Nestarec fashion, the winemaking is low‑intervention: the grapes undergo extended skin contact to develop color, texture and aromatic depth, followed by spontaneous fermentation with indigenous yeasts. The wine is then aged in neutral vessels (often large old barrels or tanks) on its lees, with minimal handling, no fining or filtration, and little to no added SO₂ at bottling, resulting in an honest, living expression of grape and terroir.

Food & Serving
WTB 2021 is a highly versatile food wine that shines with bold, aromatic and umami‑rich dishes. It pairs beautifully with Middle Eastern mezze, roasted root vegetables, pumpkin dishes, miso‑glazed fish, herb‑driven poultry, grilled pork, alpine cheeses, and fermented or pickled vegetables. Its tannic grip and acidity also make it a smart match for richer vegetarian plates like mushroom risotto or creamy polenta with roasted squash. Serve slightly chilled at around 12–14°C (54–57°F). A light decant of 20–30 minutes helps the aromatics open and allows the faint natural funk to blow off, revealing the wine’s layered, savory complexity.
