Milan Nestarec TRBLMKR Bio 2021 is a characterful skin‑contact white that champions an almost forgotten local grape from Moravia. Built around old‑vine Neuburger with a dash of Malvasia Bianca, it’s Nestarec’s playful answer to a variety many growers now consider a ‘troublemaker’ in the vineyard. Here, that supposed problem child is given complete freedom in the cellar, resulting in an expressive, textural wine that’s both uncompromising and deeply drinkable.
Tasting Notes
In the glass, TRBLMKR 2021 shows a hazy golden to deep straw color, with a lightly amber hue from its time on skins, reflecting its minimal‑intervention upbringing. The nose opens with ripe orchard fruits, yellow plums and apricot skins, joined by notes of chamomile tea, citrus peel, crushed herbs and a gentle nuttiness. Subtle spice, a touch of honeycomb and a faint florality from the Malvasia add further complexity.
On the palate, the wine is medium‑bodied yet remarkably vibrant, with a firm but finely woven tannic grip from the seven days of skin contact. Flavors of baked apple, quince, dried citrus, stone fruit and toasted seeds are layered with loess‑driven minerality and a savory, slightly salty edge. The natural acidity keeps everything lifted and moreish, with a long, dry, textural finish. While very enjoyable now for its energy and complexity, this vintage has the structure to evolve nicely over the next 3–6 years, gaining further depth and nutty, herbal nuances in bottle.
Production
The fruit for TRBLMKR Bio 2021 comes from 20–25‑year‑old vines planted on loess soils in a gentle, south‑east‑facing slope around the village of Moravský Žižkov in the Velkopavlovická subregion of Moravia. The site is farmed organically and certified, with great emphasis on soil life and biodiversity. Harvest is carried out by hand with strict selection in the vineyard. The grapes undergo about seven days of maceration on the skins, largely with intact, uncrushed berries, encouraging a slow, delicate extraction rather than heavy tannin. Fermentation is spontaneous with native yeasts. Around the midpoint of the natural fermentation, the must is pressed off over roughly ten hours, then the wine is aged for just under two years in large, seasoned Stockinger oak casks. There is no fining, no filtration and no cosmetic additions, reflecting Nestarec’s low‑intervention philosophy.
Food & Serving
This is a highly versatile food wine that shines with boldly flavored, textural dishes. Think roasted root vegetables, pumpkin or squash with herbs, grilled fish with Mediterranean spices, poultry with lemon and thyme, or richer vegetarian plates like mushroom risotto, cauliflower steak or lentil dishes. Its gentle tannic grip and savory edge also make it an excellent partner for charcuterie, washed‑rind cheeses and aged alpine styles. Serve at around 10–12 °C: a touch warmer than a classic crisp white to let the aromatics and texture fully open. A short decant of 20–30 minutes is recommended, both to let any initial reduction blow off and to allow the wine’s layers to unfold in the glass.
