This field‑blend style cuvée of Riesling, Sauvignon Blanc and Pinot Blanc offers energy, precision and a playful, almost tonic‑like freshness that makes it instantly engaging. Crafted by one of Central Europe’s most talked‑about natural winemakers, it captures both Nestarec’s free‑spirited philosophy and the growing reputation of Velkopavlovická as a serious cool‑climate region.

Tasting Notes
In the glass, G & T 2019 presents a pale lemon to light golden hue with a gentle haziness typical of minimally filtered, low‑intervention wines. Swirl it and you’ll see a lively, almost electric brightness that hints at the freshness to come. The nose is aromatic and lifted: citrus zest, green apple and white peach from the Riesling and Pinot Blanc, joined by elderflower, fresh-cut herbs and a subtle nettle note from the Sauvignon Blanc. There’s a stony, mineral edge and a faint hint of bitter lemon and tonic water botanicals that give the wine its name and personality. On the palate, it is dry, tense and refreshing with a linear acidity that keeps everything focused. Juicy lime, grapefruit and crunchy pear take the lead, supported by hints of gooseberry, soft white florals and a gentle, pithy bitterness on the finish that makes the next sip irresistible. The texture is slightly rounded yet brisk, with a light phenolic grip adding structure without heaviness. Best enjoyed over the next few years for its vivid freshness, though it has enough acidity and extract to develop a bit more complexity in the short to medium term.

Production
G & T 2019 comes from organically farmed vineyards in the Velkopavlovická subregion of Moravia, where cooler nights, loess and clay‑limestone soils and rolling hills combine to produce whites with both ripeness and keen acidity. Nestarec works with low yields and hand-harvested fruit to capture clean, concentrated grapes at optimal ripeness. In the cellar, the wine is made with a low‑intervention philosophy: native yeasts for spontaneous fermentation, minimal handling, and aging in neutral vessels to preserve purity of fruit and a strong sense of place. Fining and filtration are either minimal or avoided, with only modest sulfur, resulting in a vivid, textural wine that reflects the vintage and terroir rather than heavy cellar influence.

Food & Serving
This is a highly versatile food wine that thrives alongside fresh, vibrant cuisine. Think oysters and shellfish, ceviche, sushi, lightly grilled fish, goat’s cheese salads, asparagus dishes, herb‑driven vegetable plates, and simple tapas like marinated olives and anchovies. Its herbal lift also works beautifully with Vietnamese, Japanese or lighter Thai dishes, especially those with lime, cilantro and fresh chili rather than heavy sweetness. Serve well chilled, around 8–10°C, to emphasize its zippy, tonic‑like refreshment; as it warms slightly in the glass, more stone fruit and textural nuances will emerge. Decanting is optional but a brief splash in a carafe or a few minutes in the glass can help the aromatics open up, particularly if the bottle is very cold on pouring.
