Tasting Notes
In the glass, it shows a deep, dark colour that hints at the concentration within. The nose is layered and poised, opening with dark cherry, blackcurrant, pencil lead, dried spices, and cedar, all delivered with restraint rather than overt richness. On the palate, the wine mirrors the aromatics beautifully, with dark fruit at the core and a polished, balanced structure that gives the wine finesse and length. It is enjoyable now for its purity and detail, but it also has excellent ageing potential, with the complexity to evolve gracefully over time.

Production
The grapes come from the Doyen Vineyard in Willunga, within McLaren Vale, South Australia, an area known for its warm, Cabernet-friendly climate and fertile, nutrient-rich soils. This terroir provides ideal conditions for producing Cabernet Sauvignon with both ripeness and freshness. Production is intentionally limited, with just over 200 cases made, underlining the single-vineyard focus and selective approach. The result is a wine shaped by careful vineyard sourcing and a winemaking style that favours balance, precision, and varietal clarity.

Food & Serving
This Cabernet Sauvignon pairs beautifully with roasted lamb, grilled ribeye, beef tenderloin, venison, or hard aged cheeses. Serve it at around 16–18°C, and consider decanting for 1–2 hours if drinking young to allow the aromatics and structure to open fully.
