Grapes are hand-harvested at optimal ripeness to preserve freshness and aromatic purity, with strict selection both in the vineyard and at the winery. Vinification follows the traditional method: gentle pressing of whole clusters, fermentation of the base wines, and careful blending of Chardonnay and Pinot Nero before secondary fermentation in bottle. The mention “Riserva 35” alludes to an extended maturation period on the lees (typically around 35 months or more), enriching texture, complexity and fine mousse before disgorgement and dosage to Brut level.
