Harvest is typically done by hand to ensure only perfectly ripe, healthy clusters are selected. In the cellar, Maso Cantanghel focuses on a gentle vinification: careful destemming, controlled fermentation to protect delicate aromas, and a respectful maceration to extract fine tannins rather than power.
