Masari Leon Metodo Classico Durella Dosaggio Zero is a razor-sharp, characterful sparkling wine from the volcanic hills of Veneto. Crafted from the native Durella grape and made in the traditional method, it delivers precision, minerality and tension instead of softness and sweetness. With zero dosage, this bottling offers a pure, unmasked expression of its high-altitude terroir – a modern take on a historically rustic variety long prized for its acidity in the Lessini Mountains.

Tasting Notes
In the glass, Leon shows a luminous straw-yellow hue with fine, persistent bubbles forming a delicate mousse. The nose is vibrant and incisive, opening with green apple, lemon zest and crunchy pear, followed by notes of white flowers, flint, wet stone and a subtle hint of freshly baked bread from its lees aging. On the palate, this is taut, dry and vertical, with Durella’s trademark acidity driving the wine from start to finish. Citrus (lemon, lime, grapefruit pith) and green orchard fruit are layered over a pronounced mineral core, giving a mouthwatering, saline finish. The absence of dosage keeps everything laser-focused and bone-dry, while time on the lees adds just enough texture and creaminess to balance the structure. Best enjoyed within a few years of release for maximum energy and freshness, though its acidity and traditional-method structure mean it can comfortably develop more complexity over 3–5 years.

Production
Sourced from hillside vineyards in Veneto, Masari’s Leon comes from rocky, volcanic and limestone-rich soils that naturally favor high acidity and mineral-laced wines. The vineyards sit at altitude, benefiting from cool nights and good ventilation, which help preserve aromatic purity and freshness in the Durella grapes. Harvest is typically carried out by hand to ensure careful selection of bunches. In the cellar, the base wine is gently pressed and fermented in stainless steel to retain crisp, clean fruit. It then undergoes secondary fermentation in the bottle (Metodo Classico), resting on its lees for an extended period to build texture and complexity before disgorgement. With no dosage added, the final wine is bottled as Dosaggio Zero, reflecting an uncompromising, terroir-driven style.

Food & Serving
This is an excellent sparkling wine for those who enjoy ultra-dry, gastronomic styles. Its high acidity and mineral backbone make it ideal with oysters, raw and marinated seafood, crudo, sushi and sashimi. It also shines alongside fried dishes (tempura, fritto misto), goat cheese, fresh cheeses and simple vegetable-based antipasti. More adventurous pairings include lightly spiced Asian dishes or ceviche, where the wine’s precision cuts through richness and heat. Serve well chilled at 6–8°C, slightly warming in the glass to unlock its aromas. Decanting is not necessary, but opening the bottle a few minutes in advance and using proper flutes or tulip-shaped glasses will help the wine show its finest detail.
