After gentle pressing, the must is fermented with indigenous yeasts at controlled temperatures—primarily in stainless steel to preserve freshness, with possible aging on fine lees to add texture and complexity—resulting in a pure, expressive white that reflects both grape variety and place without heavy oak influence.
