Tasting Notes
In the glass, Le Meteque Extra Brut shows a pale lemon color with green reflections and a fine, persistent bead that signals careful, quality-driven winemaking. The nose opens with bright citrus—think lemon zest and grapefruit—layered with crisp green apple, white flowers, and delicate chalky minerality. Subtle notes of brioche, fresh almonds, and a hint of salinity emerge with a little air, adding complexity without overwhelming the wine’s freshness. On the palate, this Champagne is taut, linear, and very dry, with a vibrant acidity that drives flavors of citrus, orchard fruit, and white peach. The Chardonnay’s purity is front and center, supported by a precise mineral core and a long, mouthwatering finish that leaves impressions of crushed stone, lemon pith, and a whisper of pastry. Production
Le Meteque Extra Brut is made from 100% Chardonnay sourced from carefully selected vineyard parcels within the Champagne region, where cool climate, chalk and limestone-rich soils, and well-exposed slopes combine to give both finesse and tension. Grapes are typically harvested by hand to ensure optimal ripeness and careful selection of bunches, a crucial step for a low-dosage style that leaves nothing to hide behind. In the cellar, the must is gently pressed and fermented in temperature-controlled vessels, with a focus on preserving aromatics and purity of fruit; a portion may see aging on fine lees to build texture and complexity. After the second fermentation in bottle, the wine rests sur lattes for an extended period to develop fine bubbles and subtle autolytic notes, before being disgorged with an extra brut dosage that underscores the wine’s crisp, chalk-driven character.

This pure Chardonnay Extra Brut is a natural partner for refined, delicate dishes where freshness and precision are key. Try it with oysters, scallop crudo, sushi and sashimi, or fresh goat cheese and lightly dressed seafood salads. It also works beautifully with tempura, grilled prawns, and simple dishes featuring seasonal vegetables, citrus, and herbs. Serve well chilled at around 8–10°C (46–50°F) to emphasize its energy and finesse. A brief 10–15 minutes in the glass is usually enough for it to open; decanting is not typically necessary, though pouring into larger white-wine stems rather than narrow flutes will help the aromas fully express themselves.
