Marsuret Valdobbiadene Prosecco Superiore Dosaggio Zero “Amoler” is a bone-dry, finely etched expression of Glera from the heart of the Valdobbiadene hills in Veneto. Crafted without any added dosage (sugar), it showcases Prosecco in its purest, most mineral-driven form, with a focus on precision and terroir. “Amoler” comes from carefully selected hillside vineyards, reflecting Marsuret’s long-standing expertise in traditional Prosecco production and their commitment to quality over volume.
Tasting Notes
In the glass, Amoler shines a pale straw yellow with shimmering green reflections and a fine, persistent mousse. The nose is clean and lifted, offering notes of crisp green apple, pear skin and white peach, layered with hints of acacia blossom, fresh citrus zest and a subtle chalky minerality.
On the palate, this is a taut, razor-dry Prosecco Superiore: light to medium-bodied yet intensely refreshing, with crunchy orchard fruit, lemon and lime, and a delicate herbal edge. The lack of dosage allows the natural saline and stony nuances of Valdobbiadene to come through, giving a long, linear finish with mouthwatering acidity. Best enjoyed in its youth for maximum vibrancy and aromatic clarity, it will hold well for a couple of years, gaining a touch of softness and complexity over time.
Production
The grapes for Amoler come from steep, hand-tended hillside vineyards in the Valdobbiadene area of Veneto, where Glera vines thrive on well-drained, marl and limestone-rich soils and benefit from excellent exposure and cool mountain breezes from the nearby Dolomites. Harvesting is carried out by hand to ensure only perfectly ripe, healthy bunches reach the cellar. After a gentle pressing, the must undergoes a controlled, cool fermentation in stainless steel to preserve aromatic delicacy. The second fermentation follows the Martinotti/Charmat method in pressurized tanks, but with an extended period on lees to build texture and finesse. The wine is bottled with zero dosage, resulting in an uncompromisingly dry, terroir-focused Prosecco Superiore.
Food & Serving
This Dosaggio Zero style is a superb match for briny and delicately flavored dishes: think oysters, crudo, sushi, grilled prawns, as well as simple Venetian cicchetti, tempura vegetables and fresh goat cheese. Its racy structure also makes it an excellent aperitif for those who prefer a more precise, less sweet Prosecco. Serve well-chilled at around 6–8°C in a tulip-shaped sparkling wine glass to enhance the aromatics and mousse. Decanting is not necessary; simply open and pour, allowing a few minutes in the glass for the wine to fully express its floral and mineral notes.
