Marc Hébrart Noces de Craie Champagne Grand Cru 'Aÿ' 2016 is a pure Pinot Noir expression from one of Champagne’s most celebrated Grand Cru villages. Built on chalk-driven precision and extended lees aging, it combines depth, finesse, and a strikingly dry profile that reflects both the character of Aÿ and the house’s meticulous style.
Tasting Notes
In the glass, it shows a bright, refined golden hue with a fine, persistent mousse. The nose is layered with ripe red berries, fresh citrus, and a pronounced chalky minerality that gives the wine real lift and definition.
On the palate, it is full-bodied yet elegant, with a dry, focused structure and excellent balance between freshness, texture, and intensity. The low dosage keeps the finish crisp and linear, while the extended time on lees adds depth and a subtle creamy complexity. It is built for graceful development and can age beautifully over the coming years.
Production
This Champagne comes exclusively from Grand Cru vineyards in Aÿ, where chalk and clay soils provide both power and tension. The 2016 vintage benefited from a long period on the lees, which helped develop complexity, a more refined mousse, and added textural depth to the final wine.
Food & Serving
An excellent choice as an aperitif, but it also shines alongside shellfish, delicate fish dishes, and lighter poultry or veal preparations. Serve well chilled, ideally around 8–10°C, and decanting is not usually necessary, though a brief pause in the glass can help the aromatics open fully.
Producer
Champagne Marc Hébrart is a respected grower-producer based in the Marne Valley, known for crafting precise, terroir-driven Champagnes with a strong focus on Pinot Noir. The house has earned a fine reputation for quality and consistency, especially through its Grand Cru and single-village bottlings that highlight the character of Champagne’s most prized sites.
