After gentle pressing and temperature-controlled fermentation in stainless steel, the base wines are blended and bottled for the second fermentation according to the traditional method (Méthode Traditionnelle). The wine then ages on its lees in bottle, gaining fine bubbles and subtle autolytic notes before riddling, disgorgement, dosage to Brut level, and final corking in its impressive magnum format.
