Lo Sparviere Franciacorta Extra Brut

Lo Sparviere Franciacorta Extra Brut is a refined, Chardonnay-only sparkling wine that showcases the elegance and precision for which Franciacorta is known. Crafted from two carefully chosen south-facing vineyard sites, it offers a beautifully balanced style with the structure to age gracefully over time.

Tasting Notes
In the glass, it shows a bright, fine mousse and a polished, luminous appearance. The nose is typically delicate and expressive, with notes that suggest fresh citrus, green apple, white flowers, and subtle brioche from lees aging. On the palate, it is crisp, dry, and very well composed, with a linear mineral backbone and a clean, refreshing finish. The Extra Brut style keeps the fruit focused and elegant, while the extended sur lie aging adds texture and depth. It is made with aging in mind and should develop additional complexity in bottle over the years.

Production
This Franciacorta is made entirely from Chardonnay grown in the Bobani and Brolo vineyards, both of which are south-facing and positioned in two distinct terroirs: Provaglio d’Iseo and Monticelli Brusati. The combination of these sites contributes both ripeness and finesse, resulting in a wine with balance, tension, and aging potential. Production is limited to around 10,000 bottles annually, and the wine spends at least 24 months on lees before release.

Food & Serving
A versatile sparkling wine for refined food pairings, it works particularly well with oysters, raw seafood, sushi, light fish dishes, tempura, and delicate white meats. It also pairs nicely with aged Parmesan or other savory hard cheeses. Serve well chilled at around 6-8°C; decanting is not recommended.
