Tasting Notes
In the glass, this Riserva presents a luminous straw-gold colour with subtle copper reflections and a very fine, persistent bead of bubbles. The mousse is creamy yet delicate, hinting at the long aging on the lees. The nose opens with layers of brioche, toasted hazelnut, and fresh pastry, followed by ripe citrus, golden apple, and hints of dried flowers and mineral notes. On the palate, it is dry, structured, and complex, combining ripe orchard fruit and lemon zest with nuances of almond, baker’s yeast, and subtle spice. The long lees aging lends a silky texture and notable depth, while the acidity remains vibrant and refreshing, giving great balance. This 2013 vintage still has excellent aging potential; well-stored bottles can continue to develop further complexity over the next several years, gaining more tertiary notes of honey, nuts, and dried fruit.

Production
Sourced from selected vineyards in Trentino Alto Adige, this Trento DOC reflects its alpine origins, where cool nights and sunny days help the Chardonnay and Pinot Nero ripen slowly while preserving acidity and aromatic purity. The grapes are hand-harvested to ensure careful selection of only the best clusters. After a gentle pressing, the base wines ferment and are blended before undergoing second fermentation in the bottle according to the traditional (classic) method. The wine then rests on its fine lees for a minimum of 96 months, allowing autolytic complexity and a refined mousse to develop. A late disgorgement preserves freshness while showcasing the full, mature expression of the long aging period.

Food & Serving
This refined Trento Riserva is a natural partner for elevated cuisine: think oysters, caviar, and refined shellfish dishes, as well as delicate fish carpaccio, sushi, or lobster with beurre blanc. It also complements poultry in creamy sauces, veal tartare, and aged hard cheeses. Serve well-chilled but not icy, ideally around 8–10°C, to allow the aromas to unfold gradually. Decanting is not necessary, but pouring the wine into suitably large sparkling wine glasses (rather than very narrow flutes) will best showcase its complexity and fine perlage.
