Tasting Notes
In the glass, Les Cordeliers Crémant de Bordeaux Brut Exclusive shows a pale straw to light gold hue, enlivened by a fine, persistent bead of bubbles and a delicate mousse. On the nose, it opens with fresh citrus—think lemon zest and grapefruit peel—layered with green apple, white peach and hints of acacia blossom. Subtle notes of brioche, almond and chalk add complexity without overwhelming the wine’s freshness.
On the palate, this Brut is crisp and dry, with Sémillon bringing a rounded texture and a gentle waxy richness beneath the lively acidity. Flavors of ripe pear, crunchy apple, lemon curd and white flowers unfold into nuances of toasted bread and a faint saline edge, giving the finish both length and precision. While delicious now for its youthful vibrancy, it can comfortably age for 3–5 years in bottle, gaining a touch more creaminess and autolytic complexity over time.
Production
Les Cordeliers Crémant de Bordeaux Brut Exclusive is crafted from Sémillon grown on limestone- and clay-rich soils typical of the Bordeaux Right Bank, which lend both freshness and a subtle mineral line to the wine. Grapes are harvested by hand at night or in the cool morning hours to preserve aromatics and natural acidity, with strict selection to ensure only the healthiest, perfectly ripe bunches are used. After gentle pressing, the base wine is vinified at controlled low temperatures in stainless steel to retain purity of fruit. The traditional method (méthode traditionnelle) is then employed, with a secondary fermentation in bottle and an extended period on lees in the historic underground cellars beneath the cloister, adding fine bubbles, texture and a discreet toasty character before disgorgement and dosage to Brut level.

This Crémant de Bordeaux pairs beautifully with a wide range of dishes—from oysters, shrimp and fresh crab to sushi, ceviche and lightly fried seafood. It also complements goat cheese, soft-rind cheeses like Brie or Camembert, and delicate poultry dishes, as well as canapés and aperitif platters. Serve well-chilled at around 6–8°C (43–46°F) to highlight its freshness and fine mousse. A brief 5–10 minutes in the glass or an open bottle is enough for it to reveal its floral and brioche notes; no extended decanting is necessary, though pouring into proper tulip-shaped sparkling flutes will best showcase its aromatics.
