Tasting Notes
In the glass, the 2016 Les Carmes Haut-Brion shows a medium to deep garnet-purple hue, hinting at both youthful energy and depth. The nose is intense yet refined, opening with kirsch, black raspberries and ripe black plums, followed by layers of cassis, violets, fine dark chocolate and a subtle graphite/cedar pencil edge. With air, more floral and spicy nuances emerge, adding further complexity.
On the palate, this is medium-bodied but focused and tightly knit, with a vibrant, juicy core of red and black fruits framed by fine-grained, gently firm tannins. The Cabernet Franc brings lift, fragrance and a touch of savory detail, while the Merlot adds plush fruit and Cabernet Sauvignon contributes structure and drive. The wine is lively and precise, with excellent freshness, well-integrated oak and a long, balanced, finely etched finish. Still youthful, its structure and concentration suggest a strong aging potential of 15–25 years from the vintage, rewarding patience with greater complexity and silkier texture over time.
Production
Les Carmes Haut-Brion sits on prime Pessac-Léognan terroir just outside the city of Bordeaux, where deep gravel soils mixed with clay and sand rest over limestone, providing excellent drainage and encouraging deep root systems. The 2016 blend is 41% Cabernet Franc, 39% Merlot and 20% Cabernet Sauvignon—one of the highest proportions of Cabernet Franc ever used at the estate. Grapes are typically harvested by hand, parcel by parcel, at optimal ripeness to preserve freshness and aromatic intensity. Fermentation generally takes place in temperature-controlled vats, with careful extraction to maintain finesse rather than power. The wine is then matured for around 22 months in French oak barrels, 65% new and 35% one-year-old, allowing the oak to support and frame the fruit without overwhelming its floral, mineral character.

Les Carmes Haut-Brion 2016 is a versatile, gastronomic Bordeaux that shines alongside refined dishes. It pairs beautifully with roasted lamb, dry-aged beef, venison, duck breast, or classic French fare such as confit de canard, pigeon, or a richly sauced veal dish. It also complements earthy mushroom preparations, truffle-infused dishes and aged hard cheeses. Serve at 16–18°C (60–64°F) to highlight its freshness and aromatic complexity. In its youth, decanting for 1.5–2 hours is recommended to open up the bouquet and soften the tannins; as it matures, a shorter decant of about 30–45 minutes will usually suffice, mainly to let the wine breathe and shed any initial reduction.
